Abstract: In recent years, there has been a growing demand for plant-based protein alternatives due to increasing awareness of health, sustainability, and dietary preferences. However, many vegetarians and vegans may not meet their daily protein requirements, leading to potential nutritional deficiencies. This project aims to develop a vegan protein beverage using horse gram as the primary protein source. Horse gram is a rich source of protein and contains several essential amino acids, although it is limited in certain amino acids. To improve the overall amino acid balance, rice flour is incorporated as a complementary ingredient, while corn starch is added to enhance the texture and stability of the formulation. Protein is primarily extracted from horse gram and partially from rice flour to formulate a protein-rich beverage. Enzymatic treatment is employed to reduce anti-nutritional factors such as trypsin inhibitors, improve protein yield, and enhance digestibility. This process ensures better absorption and utilization of protein by the body. The developed product is expected to be a cost-effective, plant-based protein drink that serves as a healthy alternative to synthetic supplements and supports improved nutritional intake.
