MUMBAI, India, June 24 -- Intellectual Property India has published a patent application (202431096215 A) filed by Guiltfree Industries Limited on December 05, 2024, for Healthy Flour Composition And High Protein, High Fibre, Dal-Shaped Snack Product Prepared From The Same.

Abstract: The invention relates to a healthy flour composition and a process for producing a high-protein, high-fibre, dal-shaped extruded snack. The composition comprises defined proportions of multiple pulse flours, cereal flours, peanut, modified starch fibre, natural colourant, oil, seasoning and additives, forming an extrusion-stable, gluten-free matrix. The method includes dry blending, hydration to 16–18% moisture, and extrusion through a twin-screw extruder at about 120°C using a lenticular dal-shaping die, followed by hot-air drying at about 160°C, cooling, tumbling, controlled oil–seasoning spray coating and packaging. The process yields uniform dal- shaped extrudates with controlled expansion, crisp internal structure, healthy fat profile, stable natural colour and improved flavour adhesion. The resulting snack provides approximately 18% protein and a shelf-life of at least six months, serving as a healthy fat analogue to traditional fried dal namkeen.
