Abstract: A gluten-free baked cracker using flattened rice (poha) as the primary base is disclosed. Poha is soaked and mixed with millet flours such as ragi or jowar, seeds like flaxseed and sesame, olive or coconut oil, rock salt, and spices. The dough is sheeted, cut, and baked at 180°C for 15-20 minutes to produce thin, crispy crackers. The product is free from wheat, gluten, preservatives, and binder gums, with shelf life up to 3 months in airtight pouches. It provides a healthy, low-fat, high-fiber snack rich in plant protein and omega-3, suitable for celiac and gluten-sensitive individuals. The invention utilizes indigenous, low-cost ingredients and offers a baked alternative to fried snacks, addressing the lack of affordable gluten-free options and creating value-added use of poha.
