Abstract: A frying system (100) comprising fryer vessel (102) containing heated oil and having elongated oil-containing chamber (114) with product inlet region (116) and oil outlet region (118). Fryer vessel (102) includes bottom profile (120) having curved cross-section and longitudinal inclination from product inlet region (116) to oil outlet region (118) to direct frying residues. Plurality of paddle assemblies (104) disposed along fryer vessel (102), each including paddles (126) mounted on rotating shaft (124) to impart continuous dynamic motion to food product without mechanical damage and to prevent prolonged contact with static surfaces. Residence time control mechanism (106) regulates frying duration based on rotational speed, spacing, number of paddle assemblies (104), effective length, and oil temperature. Plurality of oil outlet ports (108) connected to oil filtration and recirculation system (110) withdraw oil from multiple zones and remove residues during operation, thereby enabling uniform frying and improved oil management.
