Abstract: The present invention relates to the field of food technology and functional food products, particularly to the development of a high-protein, low-glycemic index (GI) cookie formulation enriched with Buras flower (Rhododendron arboreum) and Tulsi leaves (Ocimum sanctum). The invention aims to provide a nutritionally enhanced bakery product suitable for diabetic and health-conscious consumers. The formulation incorporates protein-rich flours, dietary fibers, and herbal bioactive ingredients to improve protein content, reduce glycemic response, and enhance overall nutritional quality. Buras flower serves as a natural source of antioxidants and flavor compounds, while Tulsi contributes antioxidant, anti-inflammatory, and antidiabetic properties. The developed cookies exhibit desirable sensory characteristics, including acceptable taste, texture, aroma, and appearance, along with improved physicochemical stability and shelf life.
