Abstract: ABSTRACT Disclosed herein is a formulation and method for developing composite flour vermicelli (100) that comprises a brown teff flour present in an amount of twenty five percentage by weight configured to provide nutritional composition and compositional support, a foxtail millet flour present in an amount of twenty percentage by weight, a black pea flour present in an amount of twenty percentage by weight, a tapioca starch present in an amount of thirty percentage by weight, a psyllium husk hydrocolloid present in an amount of five percentage by weight, a hydrated psyllium gel present in amount derived from hydration of the psyllium husk hydrocolloid containing five percentage by weight psyllium husk, a dough composition present in an amount of twenty five percentage by weight, an extruded vermicelli strand formed from the dough composition, a drying component configured to perform moisture reduction and shelf stabilization through thermal drying operation.
