Abstract: ABSTRACT DRY MULTI-MILLET FERMENTATION COMPOSITION AND SYSTEM FOR PREPARATION OF A FERMENTED CEREAL-BASED BEVERAGE The present disclosure provides a fermentable millet-based composition for preparing a fermented beverage, the composition including at least one millet flour providing a fermentable substrate containing starch and prebiotic fibers, an enzyme-active sprouted grain flour containing amylase enzymes capable of hydrolyzing starch into fermentable sugars, and a digestible starch, wherein the composition enables spontaneous fermentation when hydrated without requiring addition of external starter cultures or fresh vegetables. The disclosure further provides a botanical seasoning composition including an enzyme-containing seed powder comprising one or more naturally occurring enzymes, at least one polyphenol-rich botanical powder, at least one aromatic spice powder, and at least one mineral salt. The botanical seasoning composition contributes bioactive constituents, flavor, aroma, mineral constituents, and functional characteristics to the beverage composition and may support the overall microbial environment associated with the fermented beverage. A self-fermenting beverage system includes the fermentable millet-based composition and the botanical seasoning composition provided as separate components, and a method of preparing a fermented beverage using the system is also provided.
