Abstract: The present invention relates to the development of a biodegradable and bioactive edible polymer coating for the preservation of paddy grains during storage. The coating is formulated using natural biopolymers extracted from avocado seed starch, banana peel starch, and guava pectin, which act as film-forming agents to produce a thin, uniform, and protective edible biofilm on the surface of paddy grains. Betel leaf extract is incorporated as a natural antimicrobial and antifungal agent to inhibit the growth of storage microorganisms responsible for grain spoilage. Black rice extract is included as a natural antioxidant to reduce oxidative deterioration and preserve the nutritional and physical quality of the grains. The anthocyanin pigments present in black rice extract also function as a natural pH indicator, enabling visual monitoring of storage conditions. The coating is applied by dipping or spraying, followed by controlled drying to form a continuous protective layer that reduces moisture absorption, limits microbial contamination, minimizes post-harvest losses, and significantly extends the shelf life of paddy grains using sustainable, biodegradable, and environmentally friendly materials.
