Abstract: The invention relates to a process and composition for producing bee-free honey from an engineered nectar precursor. The engineered nectar comprises a plurality of carbohydrates including mono-, di-, oligo- and/or higher carbohydrates, together with selected amino acids or other nitrogen-containing precursors, organic acids or acid precursors, minerals, polyphenols and optionally botanical components. The precursor is subjected to one or more food-compatible enzymatic transformations, including optional carbohydrate hydrolysis and glucose oxidation, followed by controlled maturation and concentration or dehydration. The process permits control of carbohydrate, amino-acid, organic-acid, botanical/polyphenol and volatile profiles and of physicochemical parameters including moisture, water activity, refractive index, soluble solids and viscosity. The resulting composition provides a bee-free honey platform capable of generating selected functional and analytical profiles without requiring bees or bee-derived enzymes.
