Abstract: Abstract The present invention describes an optimized drying method for palmyra fruit (Borassus flabellifer} pulp using microwave and infrared technologies. The method aims to improve drying efficiency, extend shelflife, and preserve nutritional quality. Microwave drying enables rapid internal heating, resulting in faster moisture removal and better retention of proteins and carbohydrates. Infrared drying enhances surface heating, improving mineral retention and texture characteristics. The developed process provides an efficient approach for producing high-quality, value-added palmyra products suitable for commercial applications.
