Abstract: “COATING COMPOSITION FOR POST-HARVEST PRESERVATION OF PERISHABLE PRODUCE” Disclosed is an edible coating composition for post-harvest preservation of perishable produce, including fruits and vegetables. The coating composition includes gentisic acid (GA) encapsulated in sulfobutyl ether-ß-cyclodextrin (SBE-ß-CD), combined with potassium sorbate (PS) and chitosan. The tripartite synergistic combination of GA, SBE-ß-CD, and PS achieves a pH-responsive, multi- target preservation effect. The composition significantly extends shelf life, reduces microbial spoilage, mitigates oxidative browning, and maintains sensory and nutritional quality. It is GRAS-compliant and suitable for organic applications. The composition is versatile, and is applicable as edible coatings, for fogging in bulk storage, electrostatic spraying on packing lines, or impregnation into packaging liners. The composition overcomes the solubility and passive release limitations of SA/ß-CD systems, and provides an effective, scalable, and consumer-acceptable solution for post-harvest produce preservation.
