Abstract: This invention discloses a clean-label, ready-to-consume, nutrient-enriched carrot-ball confection formulated as a minimally processed functional snack suitable for all age groups. The confection comprises a cohesive whole-food plant matrix of finely grated carrot blended with desiccated coconut powder, chia seeds, walnuts, dates, cocoa powder, and vanilla extract. The formulation uses the natural structural and binding properties of dates and coconut to form bite-sized, grab-and-go snack spheres without requiring synthetic binders, stabilizers, refined sugar, hydrogenated fats, or artificial additives. Analytical characterization indicates a balanced, stable nutritional profile featuring an inorganic mineral ash content of 2.03% (w/w), a controlled storage moisture level of approximately 21.55% (w/w), a crude plant-based protein content of 7.7% (w/w), a vitamin C antioxidant concentration of 0.003% (w/w), and a healthy lipid fraction of 35% (w/w) derived from functional seeds and nuts.
