Abstract: This invention describes a biofortified pearl millet based multipurpose instant festive food mix and a method for preparing the same. The formulation comprises malted biofortified pearl millet variety HHB-299 combined with roasted Bengal gram flour, roasted sesame seeds, roasted groundnuts, sugar powder, and flavoring ingredients in predetermined proportions to obtain a homogeneous ready-to-use composition. Germination and malting of the pearl millet partially hydrolyze starch and protein fractions, thereby improving digestibility, enhancing flavor, reducing undesirable flatulence-causing compounds, and increasing consumer acceptability. The fortified formulation provides elevated levels of protein, dietary fiber, iron, zinc, healthy fats, antioxidants, and energy while eliminating the need for extensive ingredient preparation during cooking. The instant festive mix is suitable for preparing multiple traditional products including laddus, halwa, biscuits, beverages, and similar festive foods using a single standardized formulation. The invention provides a preservative-free, shelf-stable, nutritionally balanced, and rapidly preparable food composition particularly suitable for promoting millet consumption among urban consumers while preserving traditional culinary characteristics.
