The application for the patent was published on September 11, 2026, under issue no. 37/2026.

Abstract: The present invention relates to a biodegradable chromogenic freshness indicator for monitoring freshness of perishable food products. The indicator comprises red- cabbage-derived anthocyanin stabilized with polysorbate 80 and immobilized within a rice-flour-derived matrix comprising rice starch and endogenous rice proteins. Thermal gelatinization followed by film casting, controlled drying and retrogradation forms an interconnected microporous network that retains the stabilized anthocyanin while permitting volatile spoilage-associated compounds comprising ammonia, dimethylamine and trimethylamine to reach the chromogenic material. Interaction of the volatile basic compounds with the immobilized anthocyanin produces a visually discernible colour change corresponding to food freshness. The combined stabilization, immobilization and microporous configuration restricts pigment migration while maintaining chromogenic response, with a disclosed TVB-N response time of 8 ±1 minutes and detection limit of 5 ±0.2 mg/100 g. The indicator is applicable as a label, sticker or insert in food packaging.
