Abstract: The present invention discloses a novel functional cookie composition prepared using banana peel powder and flaxseed as key ingredients. Banana peel, an underutilized agro-waste, is processed into a fine powder and incorporated into cookie dough along with flaxseed to enhance nutritional value. The developed cookies exhibit increased dietary fiber, antioxidant activity, and essential fatty acid content, particularly omega-3 fatty acids. The invention also provides a method for preparing the cookies, including steps of peel processing, drying, pulverization, dough formulation, and baking. The resulting product demonstrates improved functional properties without compromising sensory acceptability. This invention promotes sustainable food practices by valorising fruit waste and provides a health-oriented alternative to conventional cookies.
