Abstract: ABSTRACT ARTIFICIAL INTELLIGENCE AND INTERNET OF THINGS ENABLED SYSTEM FOR REAL-TIME FOOD FRESHNESS INDEX DETERMINATION A system (100) for real-time determination of a freshness index of produce is disclosed. An image acquisition unit (110) acquires a scene image of produce. A processing unit (120) hosts an object detection module (131) localising each item as a bounding box, a cropping module (132) extracting a discrete crop therefrom, a preprocessing module (133) normalising the crop, and a freshness classification module (134) returning a fresh-class probability. A freshness index computation module (135) maps this probability to a bounded freshness index and a categorical band, which an annotation module (136) overlays in colour code. A gas sensing subsystem (140) concurrently quantises volatile emissions and compares them against a spoilage threshold. A fusion module (150) issues a high-confidence spoilage alert only upon concurrence of both modalities, a medium-confidence advisory upon a single trigger, and reports the fused assessment to a remote server (160).
