Abstract: ABSTRACT APPARATUS AND PROCESS FOR COCOA FERMENTATION The present disclosure relates to a system and a process for the fermentation of cocoa beans. The system comprises a fermentation apparatus (100) having a fermentation chamber (101) and at least one heater (103), at least one driving means (400), and at least one temperature control unit (500). The system of the present disclosure produces consistent and superior bean quality, is cost-effective, has less wear of components and hence lower maintenance, has a compact design, and hence requires a lower space, has reliable operation, is environment-friendly, increases fermented beans productivity and is safe to operate. The method for the fermentation of the cocoa beans of the present disclosure is simple, cost-effective and environment- friendly.
