Abstract: ABSTRACT The present invention provides an herbal dark chocolate formulation and a process for its preparation. The formulation comprises dark chocolate as a base matrix incorporating standardized powders of Trigonella foenum-graecum (fenugreek), Cinnamomum zeylanicum (cinnamon), and Cuminum cyminum (cumin). Three formulation variants (F1, F2, F3) are prepared with increasing herbal concentrations (fenugreek 4–5.25 g; cinnamon 7.5–8.75 g; cumin 6–7 g per 125 g chocolate). The process involves shade-drying and fine-powdering of plant materials (sieved through No. 85), controlled chocolate melting at 45–50°C via double boiler, gradual herbal incorporation with continuous stirring, mould filling, refrigerated solidification (1–2 h), and airtight packaging. Anti-diabetic evaluation by alpha-amylase inhibitory assay demonstrates Formulation F3 as the optimized formulation with 71.87% average inhibition and IC50 100 µg/mL. Antioxidant activity by DPPH assay shows IC50 0.2 mg/mL for F2 and F3. Physicochemical evaluation confirms pH 5.6–6.2, stable physical properties, and acceptable sensory profiles. The invention provides a palatable, therapeutically active functional food for supportive management of Type 2 diabetes and obesity.
