Abstract: The present invention relates to an effervescent nutraceutical composition for enhancing bio accessibility of naturally occurring minerals from plant-derived materials. The composition comprises Moringa oleifera leaf extract, citric acid, potassium bicarbonate, one or more botanical extracts selected from amla, prickly pear, Punarnava and Shatavari, piperine or a piperine-containing extract, a sweetening agent and optionally a flavouring agent. Upon dissolution in water, the citric acid and potassium bicarbonate undergo an in-situ effervescent reaction generating carbon dioxide and an acidic environment, thereby promoting disruption of phytate-mineral interactions and release of mineral ions from the plant matrix. The released minerals interact with citrate ions to form water-soluble mineral citrate complexes. The effervescence further facilitates dispersion of the botanical material. In-vitro dialysis evaluation demonstrated increased bioaccessible iron, calcium and zinc compared with untreated Moringa oleifera powder. The invention further provides processes for preparing the effervescent composition and an aqueous dispersion thereof.
