Abstract: The present invention relates to an edible waffle-based structure and a method for producing the same. The present invention promotes sustainable agriculture by valorizing fruit processing waste into a value-added food product. The edible structure comprises a composite flour mixture including pineapple peel flour in an amount of 5% to 15% by weight, in combination with at least one of a millet-based flour and a cereal-based flour, a protein-based binding agent in an amount of 25% to 45% by weight, a sweetening agent, and a fat-based ingredient. The pineapple peel flour interacts with the protein-based binding agent to provide structural integrity and desirable textural properties. The resulting edible structure exhibits resistance to moisture penetration, holding capacity for semi-solid food products under ambient conditions, and enhanced nutritional properties including dietary fibre content and antioxidant properties.
