Abstract: The present disclosure relates to an assembly (100) that includes a lower assembly (104) and an upper assembly (106) configured within a housing (102). The lower assembly (104) includes a crude inlet header (104A) and a wash water inlet header (104B) coupled to the crude inlet header (104A) through spray nozzles (104C) that are configured on the wash water inlet header (104B) at a specific angle forms a second oil-water emulsion upon emulsification of a first oil-water emulsion with wash water sprayed at specific angle through spray nozzles(104C) in the crude inlet header (104A). The upper assembly (106) having a plurality of electrode plates (106A-1) is a dual polarity (AC-DC) electrostatic field system and in fluidic communication with the lower assembly (104) through the second oil-water emulsion, generates an electrostatic field for demulsifying the second oil-water emulsion such that the wash water absorbs salt from the second oil-water emulsion.
