Abstract: Milk adulteration, inefficient dairy supply chains, and delayed farmer payments remain persistent challenges in rural dairy ecosystems. Conventional milk vending and distribution systems lack real-time quality monitoring, transparency, and direct connectivity between dairy farmers and consumers. This project proposes the development of an AI-IoT enabled intelligent milk quality monitoring and automated dairy vending system that ensures safe milk distribution while empowering rural farmers through a transparent and decentralized dairy supply model. The proposed system builds upon the concept of an automated milk vending mechanism and advances it through the integration of multi-sensor IoT technology, edge-based artificial intelligence, and digital transaction frameworks. The smart vending unit will incorporate sensors for milk density, temperature, conductivity, and fat content, enabling continuous monitoring of milk quality parameters. These sensor signals will be processed using an AI-based milk quality classification model capable of detecting adulteration, spoilage, and abnormal milk properties in real time. Based on the classification results, the system will automatically route milk for safe consumer dispensing or alternative processing, ensuring food safety and reducing wastage. The system further introduces a smart farmer authentication and digital payment module that directly records milk contributions and automatically credits payments to farmers through secure digital platforms, thereby eliminating middlemen and ensuring fair compensation. An IoT-enabled cloud dashboard will provide real-time monitoring of milk quality, vending statistics, and supply-demand analytics for stakeholders. Additionally, a machine learning-based demand forecasting module will be developed to optimize milk supply planning and minimize losses in rural dairy networks. The proposed research introduces novelty through the integration of AI- driven milk quality intelligence, IoT-enabled decentralized vending infrastructure, and data-driven dairy supply management. The system is expected to significantly improve milk safety, enhance farmer income transparency, and create a scalable technological solution for rural dairy distribution. The outcomes of this project will contribute to smart agriculture initiatives and rural technology development in Tamil Nadu, while demonstrating a replicable model for intelligent dairy supply chains in developing regions.
