Abstract: ABSTRACT The present invention relates to a portable artificial intelligence (AI)-based multispectral and RGB imaging system for non-destructive detection of adulteration and artificial coloring in powdered Indian spices and food materials. The system is specifically developed for testing powder-form samples including turmeric powder, red chilli powder, black pepper powder, coriander powder, cumin powder, and cardamom powder. The system comprises a multispectral sensing module, an RGB imaging module, a controlled illumination assembly, an embedded processing and control unit, a TinyML-based onboard analytical engine, a wireless communication interface, and a portable handheld enclosure. The multispectral sensing module comprises an AS7265X spectral sensor configured to acquire spectral reflectance data across ultraviolet (UV), visible (VIS), and near-infrared (NIR) wavelength bands ranging from about 410 nm to 940 nm, while the RGB imaging module captures visual image data of the powder sample under controlled illumination conditions. The embedded processing unit comprises a TinyML-based machine learning model implemented onboard an ESP32 microcontroller for real-time adulteration analysis using combined multispectral sensor data and RGB image data to improve classification accuracy and identify adulteration, artificial coloring agents, synthetic dyes, non-permitted food colors, contaminants, filler materials, and quality deviations in powdered spice samples including metanil yellow, Sudan dyes, lead chromate, starch, chalk powder, artificial coloring agents, and foreign particles without requiring external computing infrastructure or cloud-based processing. The final calculated analytical output generated through onboard edge-AI processing is transmitted via an onboard Wi-Fi communication module to connected display devices including a mobile device, tablet, laptop, or computing system, wherein a webpage or mobile interface displays the final conclusion of the tested sample as adulterated, artificially colored, or pure in real time. The present invention provides a rapid, portable, low-cost, energy-efficient, and field-deployable solution for authentication and quality assessment of powdered spices suitable for consumers, food safety authorities, laboratories, spice industries, retail markets, and on-site inspection applications.
