Abstract: ABSTRACT A VALUE-ADDED SPINACH SQUASH BEVERAGE AND A PROCESS FOR PREPARATION THEREOF The present invention relates to a value- added spinach squash beverage and a process for preparation thereof. The composition comprises spinach in combination with pineapple, orange, bottle gourd, aloe vera, fennel seeds, rose water, citric acid, sugar, ginger and mint leaf. In a preferred formulation, the composition comprises 20 g spinach, 30 g pineapple, 65 g orange, 50 g bottle gourd, 40 g aloe vera, 10 g fennel seeds, 50 ml rose water, 5 g citric acid, 300 g sugar, 5 g ginger and 20 g mint leaf. The process comprises washing and extracting the plant ingredients, combining the extracts, heating, incorporating sugar with continuous stirring, concentrating the mixture, adding citric acid and rose water, cooling and storing the resulting squash. The preferred formulation exhibited favourable sensory characteristics and provided a sweet-tangy, refreshing beverage suitable for dilution with water before consumption.
