Abstract: The present invention is related to a two-stage fermenter for vinegar production from sugarcane juice and other fruit juices. the system comprises a first tank (108) for alcoholic fermentation under anaerobic conditions, equipped with an agitator (110) driven by a D.C motor setup, and covered with a top plate (109). juice is introduced through a hopper, and yeast is added via an inoculation port (101). after fermentation, the alcoholic solution is transferred through a nozzle (106) into a second tank (105) for acetic fermentation. Inside, the solution trickles over a roller assembly (102) inoculated with acetobacter, rotated by a worm gear connected to a motor. an airflow device (107) at the base regulates oxygen supply, critical for acetic acid production. the fermented vinegar is collected through an outlet (104). The system is supported by a frame stand (103). the fermenter achieves high efficiency and meets food safety standards.
