Abstract: The present invention relates to a sterile and controlled symbiotic rice fermentation device (100) configured to provide controlled fermentation conditions for the growth and activity of beneficial microorganisms, particularly lactic acid bacteria. The device (100) comprises a closable sterile fermentation chamber (102), a temperature control unit (103) to maintain a temperature between 25–35°C, a pH monitoring and regulation unit (104) to monitor and control acidity levels, an air ventilation unit (106) to regulate airflow within the fermentation chamber (102), and a fermentation time monitoring and control unit (105) to control a predefined fermentation duration. Cooked rice and drinking water (101) are introduced into the fermentation chamber (102), after which the chamber is closed and the fermentation process is initiated. The device (100) automatically regulates temperature, pH, fermentation time, ventilation, and airflow to provide controlled conditions for beneficial microbial growth while reducing undesirable microbial contamination and spoilage. A fermentation process monitoring pathway (108) monitors the fermentation process, and upon completion of the predefined fermentation period, the device (100) provides an indication of completion. The fermented rice output (109) may subsequently be combined with curd and/or other probiotic food ingredients to improve taste and nutritional characteristics. The resulting fermented food product provides enhanced probiotic and prebiotic characteristics (110), improved bioavailability of nutrients including vitamin B and iron, and improved microbiological safety (111).
