Abstract: A sustainable, functional date-based energy bar composition and associated multi-stage preparation process utilize upcycled agro-industrial spent coffee grounds (SCG) powder as a value-added food ingredient to create a high-fiber, antioxidant-rich snack format that eliminates dependencies on refined sugars and synthetic preservatives. The physical food matrix comprises a primary natural sweetening and structural binding vehicle composed of 100 g of smooth deseeded date (Phoenix dactylifera) paste, fortified with a roasted nut base of 10 g of almonds and 10 g of peanuts. Upcycled spent coffee grounds are heat-treated, dried at 60°C for 8–10 hours to remove moisture, ground into a fine powder, and incorporated into the date paste across a mass distribution profile of 5 g, 8 g, or 10 g to yield specialized product iterations designated as SCG Bar 1, SCG Bar 2, and SCG Bar 3, respectively.
