Abstract: The present invention relates to a structured thermally stabilized rice-derived cereal fraction-based functional infusion matrix and a process for preparation thereof. The composition comprises 60–95% thermally stabilized rice-derived cereal fraction and 5–40% herbal bioactive blend. The cereal fraction is subjected to controlled hydration, mechanical compaction, thermal stabilization at 100– 180°C, rapid cooling, moisture reduction to =8%, and particle size grading to 250–1500 microns. The structured matrix enhances aqueous diffusion of lipid-associated rice bioactives during brewing. Comparative evaluation demonstrates improved measurable tocopherol and antioxidant extraction relative to untreated cereal fraction under identical infusion conditions. The invention provides a caffeine-free cereal-based infusion system.
