Abstract: ABSTRACT [0025] This invention investigates the impact of varying air velocities on the drying kinetics of food produce using an indirect solar dryer. The system was fabricated using locally available materials, and experiments were conducted on 1 kg tomato slices of 4 - 5 mm thickness. Air velocity was varied at 1, 1.2, 1.4 and 1.6 m/s to evaluate its effect on drying rate, moisture content, and drying time. The drying process reduced moisture content from initial levels to safe storage levels within 10 - 14 hours, depending on operating conditions. The results indicated that the optimum air velocity 1.2 m/s provided the best performance, achieving 86% moisture reduction. The approach demonstrates that controlled optimization of airflow significantly enhances drying efficiency, making the system suitable for sustainable and cost-effective food preservation.
