Abstract: A SNACK BITE COMPOSITION AND METHOD USING OAT FLOUR, FIG, DATE, AND ORANGE ZEST The invention relates to food technology, particularly a ready-to-eat snack bite composition and its preparation method using oat flour, fig, dates, and dried orange zest. Fig and dates are ground to form a uniform sweetener, preferably a fig-date paste constituting a fruit-derived sweetener matrix, into which roasted and ground oat flour and dried orange zest are incorporated to obtain a homogeneous bite-forming mass that is shapeable into round snack bites. The invention provides a naturally sweetened snack composition without refined sugar, with improved fibre-containing nutritional characteristics and desirable colour and sensory properties as compared with conventional sweet snacks and processed bite products. In particular embodiments, dried orange zest is maintained at 3.5 g, and the composition may comprise 10 g oat flour, 10 g fig, and 10 g dates. The invention is useful for preparing and consuming shelf-storable ready-to-eat snack bites.
