Abstract: The present invention discloses a smart freshness detection knife for real-time assessment of food freshness during food preparation. The knife comprises a cutting blade (101), a sensor housing (102) positioned adjacent to the cutting blade, one or more gas sensors (103), one or more chemical sensors (104), a signal-conditioning module (111), a microcontroller unit (MCU) (105), a visual indication module (106), a rechargeable battery (107), a power management unit (108), a handle (109), and a power button (110). The gas sensors and chemical sensors detect spoilage-related gases and volatile compounds emitted from food items, while the signal- conditioning module processes the sensor outputs before transmission to the MCU for freshness evaluation. Based on the analysed data, the visual indication module provides immediate colour-coded feedback indicating the freshness status of the food. The rechargeable battery and power management unit ensure reliable and energy- efficient operation.
