Abstract: ABSTRACT A RECOMBINANT FUSION PROTEIN FOR FORMULATING FOOD The present invention relates to recombinant fusion proteins comprising optionally at least one first protein; at least one second protein having at least 80% sequence identity with an amino acid sequence encoded by a nucleotide sequence selected from SEQ ID NO: 17-23, 24-28, 29-34, and/or 35-40, and optionally at least one linker having at least 80% sequence identity to an amino acid sequence encoded by a nucleotide sequence selected from SEQ ID NO: 41-53. The invention further provides expression vectors encoding the fusion protein and compositions comprising the fusion protein, optionally with one or more non-fusion proteins and additives in defined proportions. The invention also relates to incorporation of the fusion protein or composition into food products including beverages, dairy and plant-based products, desserts, confectionery, and bakery products to impart desired functional properties.
