Abstract: ABSTRACT A RECOMBINANT FUSION PROTEIN FOR FORMULATING FOOD The present invention relates to recombinant fusion proteins comprising at least one first protein having at least 80% sequence identity to an amino acid sequence encoded by SEQ ID NO: 1-10; at least one second protein having at least 80% sequence identity to an amino acid sequence encoded by SEQ ID NO: 11-17; and optionally at least one linker having at least 80% sequence similarity to an amino acid sequence encoded by SEQ ID NO: 18-26. The invention further provides nucleic acid molecules and expression vectors encoding said recombinant fusion proteins, as well as compositions comprising the recombinant fusion protein optionally in combination with one or more non-fusion proteins and additives within defined weight ranges. The recombinant fusion proteins and compositions are useful in food formulations, including beverages, dairy and plant-based products, desserts, confectionery, and bakery products.
