Abstract: “A PROCESS OF PREPARING AQUAFABA POWDER” The present invention relates to a process for preparing aquafaba powder from legume dehulling byproducts. In a first embodiment, the dehulling byproduct is mixed with water to form a slurry, followed by solid liquid separation to obtain a liquid phase. The liquid phase is pasteurized and subsequently separated to remove coagulated solids, thereby obtaining a clarified liquid aquafaba, that is further concentrated and spray dried to obtain aquafaba powder. In a second embodiment, the liquid phase is first subjected to filtration to remove a cream phase including insoluble constituents, followed by pasteurization, concentration and spray drying. The process provides a commercially viable, shelf stable aquafaba powder exhibiting high foaming capacity, improved foam stability, enhanced functionality in food applications, and reduced storage and transportation costs.
