Abstract: TITLE: A PROCESS OF PREPARATION OF SMART MULTIPHAGE ANTIMICROBIAL EDIBLE FOOD COATING COMPOSITION FOR PERISHABLE FOOD PRESERVATION APPLICANT: MEENAKSHI ACADEMY OF HIGHER EDUCATION AND RESEARCH ABSTRACT The present invention shall discloses a process of preparation of a multifunctional edible food coating composition comprising: a. dissolving chitosan, alginate, pectin and gelatin in distilled water under continuous stirring, followed by homogenization by mechanical homogenizer to obtain edible biodegradable biopolymer matrix; b. adding calcium chloride solution dropwise into sodium alginate solution under magnetic stirring, to form calcium-crosslinked alginate microcapsules; c. encapsulating bacteriophages specific to Listeria monocytogenes, Salmonella spp., Escherichia coli O157:H7, Pseudomonas spp., and Staphylococcus aureus into the calcium-crosslinked alginate microcapsules, to obtain multi phage antimicrobial cocktail, in which encapsulation is performed at predetermined pH and temperature; d. integrating biofilm degrading enzymes comprising DNase I, protease, dispersin B, and amylase into the multi phage antimicrobial cocktail and polymer matrix under gentle stirring to form a mixture; e. dispersing anthocyanin and curcumin, into the mixture to obtain multifunctional edible food coating composition.
