Abstract: TITLE: A PROCESS OF PREPARATION OF PROBIOTIC HERBAL FUNCTIONAL CANDY FOR GUT AND ORAL HEALTH APPLICANT: MEENAKSHI ACADEMY OF HIGHER EDUCATION AND RESEARCH ABSTRACT The present invention discloses a process of preparation of a probiotic herbal functional candy for gut and oral health comprising: a. culturing Lactobacillus casei and Lactobacillus crispatus in de Man–Rogosa–Sharpe (MRS) broth under incubation and separating cell free fermentation supernatants by centrifugation to obtain cell free fermentation supernatants; b. preparing a candy base by heating jaggery with fruit extract (selected from mango or pomegranate), followed by cooling to obtain candy base; c. incorporating the said cell free fermentation supernatants into the said candy base at a predetermined concentration per jaggery base and adding herbal extracts comprising mint leaf extract prepared by aqueous extraction, coriander leaf extract prepared by aqueous extraction, and ginger powder to form a mixture; d. homogenizing the said mixture at predetermined rpm to obtain homogenized mixture; e. casting and solidifying the said homogenized mixture at predetermined temperature to obtain probiotic herbal functional candy.
