MEENAKSHI AMMAL DENTAL COLLEGE AND HOSPITAL ABSTRACT The present invention discloses a process of preparation of a functional herbal chocolate composition, comprising the steps of: a. drying washed radish leaves and powdering to obtain a fine powder followed by subjecting the said fine powder to hydroalcoholic extraction using ethanol with continuous stirring, followed by filtration to obtain a radish leaves extract; b. microencapsulating the said radish leaves extract by spray drying with carriers comprising maltodextrin and gum to yield a stable microencapsulated radish leaf phytocompound powder; c. blending cocoa powder, cocoa butter, and palm sugar until homogeneous to obtain a chocolate base; d. incorporating the said microencapsulated radish leaf phytocompound powder together with soy lecithin emulsifier and vanilla essence into the said chocolate base under continuous mixing to obtain a mixture; e. conching the said mixture, followed by tempering through controlled cooling and reheating, followed by molding, cooling, and packaging to obtain functional herbal chocolate composition.
