In one aspect of the invention, fresh moringa leaves are cleaned, blanched, dried, pulverised and sieved to obtain fine moringa leaf powder. Tamarind seeds are cleaned, roasted, dehulled, pulverised and sieved to obtain fine tamarind seed powder. In another aspect of the invention, butter is melted and blended with date syrup followed by incorporation of milk powder and a reduced quantity of sucrose. The mixture is heated to the soft-ball stage of about 112–116°C with continuous stirring. The prepared moringa leaf powder and tamarind seed powder are then incorporated uniformly into the cooked mass, which is subsequently moulded, cooled, cut and packaged to obtain chewable toffees.
