Abstract: TITLE: A PROCESS OF PREPARATION OF HERBAL PROBIOTIC FUNCTIONAL BEVERAGE APPLICANT: MEENAKSHI ACADEMY OF HIGHER EDUCATION AND RESEARCH ABSTRACT The present invention discloses a process of preparation of functional synbiotic herbal probiotic beverage comprising: a. fermenting cow’s milk using lactic acid bacteria at predetermined temperature to obtain curd; b. diluting the curd with sterile water and churning to form buttermilk; c. allowing the buttermilk to settle at predetermined temperature and collecting the supernatant fraction; d. adding probiotic strains consisting of Saccharomyces boulardii and Bifidobacterium breve into the supernatant and incorporating herbal ingredients comprising of ground coriander leaves, mint leaves, ginger, curry leaves and salt followed by homogenizing to obtain a mixture; e. filtering the mixture through a predetermined membrane filter to obtain functional synbiotic herbal probiotic beverage. The present invention also discloses a functional synbiotic herbal probiotic beverage, prepared by the process as described above.
