Abstract: TITLE: A PROCESS OF PREPARATION OF COCCINIA GRANDIS-BASED NUTRACEUTICAL JAM FOR FUNCTIONAL FOOD APPLICATIONS APPLICANT: MEENAKSHI ACADEMY OF HIGHER EDUCATION AND RESEARCH ABSTRACT The present invention discloses a process for preparing a nutraceutical fruit jam composition from Coccinia grandis fruits. The process comprises washing the fruits with potable water and blanching at a predetermined temperature, followed by immediate cooling to obtain cooled fruits. The cooled fruits are mechanically pulped and sieved through a stainless steel mesh to remove seeds, peels, and coarse fibers, thereby obtaining fruit pulp. The fruit pulp is then blended with sucrose, food-grade pectin, and citric acid under continuous stirring to form a homogeneous mixture. The resulting mixture is subjected to control thermal processing until the desired jam consistency is achieved. The processed jam is subsequently filled into sterilized glass containers and sealed under aseptic conditions, followed by cooling and storage to obtain the nutraceutical fruit jam composition. The resulting composition provides a convenient fruit-based nutraceutical preparation incorporating Coccinia grandis in a palatable jam form suitable for consumption.
