Abstract: A process is disclosed for preparing a bioavailability-enhanced multi-component nutritional formulation from locally available millets and forest-based resources of the Eastern Ghats region of Andhra Pradesh. Finger millet, optionally blended with little millet or foxtail millet, is soaked, germinated for 36 to 48 hours and lactic- fermented to pH 4.0 to 4.5. Local forest leafy greens (Amaranthus species and/or Moringa oleifera) are separately dried at low temperature and powdered. An optional Dioscorea tuber powder and a local ascorbic-acid-rich wild fruit powder are blended with the fermented millet base in defined dry-weight ratios. The sequential process is designed to reduce phytates and tannins and to produce a synergistic improvement in iron bioavailability compared with a simple mixture of the same ingredients. The process is workable at household and women’s self-help group level and yields a stable powder or premix intended to support iron and calcium status among tribal and rural women.
