Abstract: ABSTRACT The present disclosure relates to a process for producing wine. The process comprises cleaning dried dates and processing the cleaned dried dates to obtain a date paste, cleaning, drying and processing mango kernels to obtain a mango kernel powder, mixing the date paste and the mango kernel powder in a predetermined weight ratio, adding water to obtain an aqueous mixture, inoculating the aqueous mixture with a fermentative yeast, fermenting the inoculated mixture under controlled temperature and pH conditions, and filtering and aging the fermented mixture to obtain wine. Further the wine exhibits an antioxidant content and comprises date- derived fermentation products, mango kernel-derived bioactive compounds comprising phenolic compounds, flavonoids and antioxidants, and ethanol produced by yeast fermentation.
