Abstract: The present disclosure proposes a process for producing a hydrogel-based functional dairy beverage with seaweed, in which Ulva reticulata is incorporated within a carrageenan-based edible hydrogel matrix and combined with a milk-based formulation containing nannari (Hemidesmus indicus) essence to improve seaweed dispersion, phase stability, texture, mouthfeel, and sensory acceptability of the dairy beverage. The process comprises preparing Ulva reticulata powder, forming a seaweed-containing carrageenan-based edible hydrogel matrix by incorporating the Ulva reticulata powder therein, separately preparing a milk-based formulation containing nannari essence, incorporating the hydrogel matrix into the milk-based formulation, homogenizing the resulting formulation, bottling, and refrigerated storage.
