Abstract: ABSTRACT A PROCESS FOR ISOLATION, PURIFICATION, AND STABILIZATION OF CHIA SEED MUCILAGE AND PRODUCTS THEREOF. The present disclosure relates to a novel and economically viable process for the isolation, purification, and stabilization of chia seed mucilage derived from Salvia hispanica. The process involves controlled hydration of chia seeds in an aqueous medium under optimized solid-to- liquid ratio, temperature, pH, and agitation conditions to facilitate efficient release of mucilage. The released mucilage is separated from the seed matrix using mechanical or centrifugal techniques, followed by purification through filtration, solvent precipitation, and/or membrane separation to remove proteins, lipids, and other impurities. The purified mucilage is subsequently stabilized through thermal treatment, drying, and reduction of water activity to enhance shelf life and functional stability. The process ensures improved extraction efficiency, higher purity, and retention of rheological properties such as viscosity and gel-forming ability. The resulting mucilage is suitable for applications in food, nutraceutical, and pharmaceutical formulations as a natural hydrocolloid. Fig. 1: Process Flow Diagram of Chia Mucilage Extraction Method
