Inventors include K. Dharshini; S. Farhana; S. Deepika Devi; Vivekanandha College Of Engineering For Women; Dr. M. S. Manojkumar; Dr. N. Subramanian; and Dr. R. Priyadharshini.

The application for the patent was published on August 21, 2026, under issue no. 34/2026.

Abstract: The invention relates to dairy processing, and particularly to a standardized process for producing lactose-free milk by enzymatic hydrolysis of lactose using beta- galactosidase. Fresh raw milk is subjected to quality assessment, filtration, pasteurization, homogenization, optimization of enzyme concentration and incubation time, controlled hydrolysis of lactose into glucose and galactose, and subsequent enzyme inactivation. The process further includes biochemical validation by 3,5- dinitrosalicylic acid assay and high-performance liquid chromatography, together with physicochemical evaluation, microbiological analysis, adulteration testing, refrigerated shelf-life assessment, and hygienic packaging. Compared with existing lactose-free milk methods, the integrated process improves lactose conversion efficiency, reduces batch variability and enzyme overuse, and preserves nutritional composition, sensory quality, microbiological safety, and storage stability. The process is useful for scalable manufacture of safe, digestible, commercially viable lactose-free milk for lactose-intolerant consumers. Fig. 1 best characterises the invention.
