Abstract: TITLE: A PROCESS AND PREPARATION OF NUTRITIOUS BROWNIES USING BUCKWHEAT AND HORSE GRAM APPLICANT: SRI RAMACHANDRA INSTITUTE OF HIGHER EDUCATION AND RESEARCH ABSTRACT The present invention discloses a process of preparation of nutritious brownies using buck wheat and horse gram. The process of the present invention comprises of following steps; a. mixing buck wheat flour, horse gram flour, cocoa powder and salt followed by sieving to form a dry mix; b. melting butter by double boiling method followed by adding dark chocolate to the melted butter to form a suspension; c. beating eggs using whisker and adding the suspension and brown sugar and mixing thoroughly until sugar dissolves to form a smooth mixture; d. pouring the smooth mixture into the dry mix and mixing thoroughly to form a thick batter; e. transferring the thick batter in a baking pan and baking in a 180oC preheated oven for 30 minutes and removing from the oven, cooling and cutting into required shapes to form nutritious brownies.
