Abstract: Development of Beetroot-infused Quinoa Energy Bites using Dates, Almonds, and Pumpkin Seeds for Gut Health Support provides a plant-based, ready-to-eat functional snack product designed to support digestive wellness without utilizing refined sugars or synthetic preservatives. The structural food formulation comprises a primary base of dry-roasted quinoa grains (Chenopodium quinoa), almonds (Prunus dulcis), and pumpkin seeds (Cucurbita pepo) that are manually ground to a specific coarse consistency using a mortar and pestle to preserve natural macro-fiber matrices. This roasted grain-and-nut base is uniformly integrated into a natural sweetening and binding matrix composed of whole dates (Phoenix dactylifera) that are pan-heated for 2 minutes to activate fruit starches. The combined matrix is blended under heat for 10 minutes and infused with a fine beetroot (Beta vulgaris) powder derived via low-temperature tray drying at 45°C to maximize antioxidant levels and color properties. The resulting warm composite is hand-shaped into distinct, bite-sized functional snack units exhibiting optimized analytical benchmarks, including a total dietary fiber content domain of 5.0%" to " 6.0%, a healthy lipid fat rating of 5.0%" to " 6.5%, a moisture volume domain of 8.0%" to " 9.0%, and a stable product pH of approximately 6.20. This composition delivers a shelf-stable snack rich in proteins, minerals, and polyphenols to support the gut microbiome.
