Abstract: ABSTRACT TITLE - A NUTRITIONALLY ENRICHED TRI-GRAIN NACHO COMPOSITION AND METHOD THEREOF The present invention relates to the field of food technology and discloses a nutritionally enriched tri-grain nacho composition and a method for preparing the same. The composition comprises ragi (finger millet) flour, quinoa flour, corn flour, dried coriander leaf powder, dried fenugreek stem powder, edible oil, salt and seasoning ingredients in optimized proportions to produce a gluten-free ready-to-eat snack. The method comprises sieving the flours, drying the coriander leaves and fenugreek stems at a controlled temperature, pulverizing the dried material, preparing a homogeneous dough, sheeting, cutting into triangular pieces, frying under controlled conditions, seasoning and packaging. The optimized formulation provides improved dough handling, crispness, flavour and overall sensory acceptability while reducing bitterness associated with conventional millet formulations. The nachos exhibit enhanced protein, dietary fibre, calcium and iron content through the synergistic combination of ragi, quinoa and corn, together with functional herb-derived ingredients, thereby providing a healthy, commercially viable and nutritionally superior snack product.
