Abstract: The present invention discloses a nutrient-fortified, clean-label, ready-to-eat functional spread composition in the form of a homogenous, creamy plant-based date peanut butter blend, and a method for its preparation. Formulated entirely from natural ingredients, the composition comprises a structural base of dry-roasted peanuts (Arachis hypogaea) blended with a mineral-fortifying and antioxidant-rich mixture of almonds (Prunus dulcis), cashews (Anacardium occidentale), and sesame seeds (Sesamum indicum). A thick, moist-ground paste of deseeded dates (Phoenix dactylifera) serves as the natural sweetening agent and glycemic stabilizer, while clarified butter (ghee) acts as a functional lipid processing medium. The formulation is completely free of refined sugars, hydrogenated vegetable oils, synthetic emulsifiers, and chemical preservatives. Analytical characterization reveals an ash content of 1.6%, a remarkably low moisture content of 0.26%, an antioxidant-active vitamin C level of 8.4% per gram, and a healthy crude lipid profile of 7.19% fat, providing a balanced, slow-release dietary supplement suitable for all age groups.
