Abstract: The present invention discloses a novel nutrient-enriched sprout-based food composition and a process for its preparation, configured to provide a clean-label, ready-to- eat snack with high protein bioavailability and superior digestibility. The composition comprises a core pulse blend of naturally germinated moong dal (Vigna radiata) and chana (Cicer arietinum) powders sautéed lightly in dairy ghee, combined with ground almonds, ground cashews, raisins, and a natural mineral-rich sweetener consisting of softened jaggery powder. Analytical validation establishes a highly stable, nutrient-dense profile featuring a controlled moisture content of 6.18% (w/w), a regulated mineral ash content of 2.847% (w/w), a crude fat fraction of 11.81% (w/w), and an exceptional bioactive vitamin C concentration of 7.48% (w/w) to provide strong antioxidant protection. The composition completely eliminates refined sugars, gluten, and synthetic preservatives, forming a shelf-stable, highly digestible, and convenient daily energy booster suitable for supporting muscle health and overall systemic wellness across all consumer age groups.
